Chocolate Orange Flavour Banana Pancakes

These were a revelation! I had a large orange that needed eating and I wanted to mix up by banana pancake recipe. I have been making banana pancakes for years now and I feel like I have finally mastered the perfect batter – although I do have two variations depending how fluffy I want them to be. These are a particularly fluffy recipe. So decadent and yet still so healthy, a perfect wake up call. Hope you enjoy! 

Ingredients

Serves 1 (easily doubled and so on..)

  • 1 small – medium banana
  • 1 large egg
  • 1 TBSP coconut flour (or other flour, but I enjoy the texture of coconut flour)
  • 1 TSP orange zest 
  • ½ TBSP raw cacao powder
  • A pinch of baking powder
  • 1 TBSP milk of choice or water
  • Toppings of choice (yoghurt, cacao nibs, peanut butter, crushed nuts, fresh fruit, e.t.c)

Add the banana, egg, baking powder and coconut flour to the blender. Blend until smooth and then add the orange zest and raw cacao. If the batter looks too thick, add a TBSP of water. The consistency should be like pouring yoghurt. 

Heat a non-stick pan over a medium heat and when heated, carefully spoon the batter into the pan, and turn the heat down to low. It should make about 5-6 medium sized pancakes – you might have to do this in two batches depending on the size of your pan.

When the batter starts to bubble on the top, they are ready to be flipped. With a spatula carefully flip them to the reverse side and cook for another minute or so. 

Plate up, adding all the toppings you wish, and serve straight away!
